Clarify that JSON Encoding uses UTF-8

In `WriterFactory.getJsonInstance(...)` `jf.createGenerator(out)` is called which uses UTF-8 as default. It would be nice to document the usage of UTF-8 in `TransitFactory.writer(...)`.
