Move to a different static site generator

Jekyll has upgraded to v4.
Can't seem to upgrade it successfully and the libraries used atm seems to be deprecated or doesn't sound like its in tandem with Jekyll. (mainly scss support).

Suggest to spend some time migrating to a newer, stable and well adopted framework.

If you are interested, I converted my personal blog from Jekyll to Gatsby and very much prefer Gatsby now (although I am still not completely sold by React, which you will need to use)!

The ecosystem of dedicated Gatsby plugins is pretty great and well maintained. Plus it being a JavaScript/Node based project you also have access to all the usual NPM packages and can integrate them much easier than in Jekyll.

One of my favourites was having access to things like gastby-image to easily have lazy loading and optimisation of images. It helped get my Google Lighthouse score up around 98/100 without much effort.

It's a monster commit, but here is everything that went into my migration from Jekyll to Gatsby (no loss of features in the migration): MitchellCash/mitchellcash.com@5573673
