Modernize blockchain payment mode #2

Replace the legacy Kovan/Web3/MetaMask flow with a modern Sepolia or local Hardhat-based flow. Use environment variables for RPC URL, contract address and wallet configuration. Keep PAYMENT_MODE=mock as the default local demo mode.
