[General]: Update macOS runner to macos-26 #352

I would like to update the macOS GitHub Actions runner image from macos-15 to macos-26.
This will move the macOS CI environment onto the newer macOS 26 runner image instead of continuing to use the older macOS 15 image.

Suggested workflow update:
runs-on: macos-26This should help keep the CI environment up to date and allow compatibility issues with macOS 26 to be identified earlier.
