Adds ClickHouse format setting support to chdb_hook, including PostgreSQL-friendly mappings such as delimiter → format_csv_delimiter and format_-stripped aliases for other supported settings. Settings are normalized to canonical ClickHouse names and applied across COPY FROM, COPY TO, DESCRIBE, structure_from, and copy_from, with duplicate/conflicting settings rejected and pg_chdb’s internal transport settings protected.
Uses parameterized SET statements on each isolated helper connection and adds regression coverage for aliases, conflicts, invalid names/values, escaping, COPY, and CREATE paths.
Resolves #49
