Release 0.8.0: the version bump for floor 1 and the host verb table #135

Prepare the plugin-hostd 0.8.0 release (the coordinator tags and publishes through the release train)

main (3c6e67e) is 6 commits past v0.7.0: PR #133 (#131): the chain floor is 1 (a declared constant in protocol.h, not a literal), the host verb table (69 rows, four profiles, in protocol.h, rendered into protocol/plugin-hostd.json and the README, checked by tests/verb_table.py), and the union-narrowed LV2 world stated as a requirement. The operator accepted the 34 proposed table rows on 2026-10-22. Nothing in main carries the version yet.

What to do (a version bump PR, nothing else)

Set the version to 0.8.0 everywhere 0.7.0 is the project's own version (found with git grep -n '0\.7\.0' at main): packaging/plugin-hostd.spec (Version, and a %changelog entry), debian/changelog (a 0.8.0 entry at the top), src/main.c (#define VERSION), doc/plugin-hostd.1 and doc/plugin-hostd-probe.1 (the .TH line), and whatever the repo's make version-check / VERSION agreement test names. Do NOT touch data/formats/*.json "since": "0.7.0" (that records when those tables appeared) or the omx-clap-host-tests >= 0.7.0 and below 0.8 requirement lines (a dependency range on ANOTHER package; if the range must move, the tests/CI will say so: then change it and say why). Write the changelog entries from what really changed (the three bullets above plus the Zynthian-ruled required verbs: midi_learn, midi_map, midi_unmap, cv_map, cv_unmap are required of clap-worker and zynthian). No marketing words, no latency or performance claims.
