docs: update install path to ~/.local/bin#5

Luca now defaults to installing to ~/.local/bin instead of /usr/local/bin to avoid requiring sudo (LucaTools/LucaScripts#17, LucaTools/Luca#104). Update the installation doc's steps, source build command, and uninstall description to match, and document the new INSTALL_DIR override and PATH-bootstrap step.
