These are probes to run against actual factual hardware which costs money and isn't in CI.
They exist as proof of concept demonstrations of the offloads on real gear. If you have a mlx5 device the probes can be made to work (I tested them against a bluefield 3 card during development).
That said, I'm not sure we should even merge this code. A real hardware test is in order, and that will require substantial devops work.
