Bump version to 2.0.3

Summary

Bumps the root package and all example workspaces from 2.0.2 to 2.0.3. This is the patch release that ships two dependency fixes for published example packages, so a fresh install of each one resolves a tree that passes vulnerability and supply-chain scans:

• @cantoo/pdf-lib pinned to 2.6.5 for @modelcontextprotocol/server-pdf (Pin @cantoo/pdf-lib to 2.6.5 in pdf-server #792).
• solid-js 1.9.15 for @modelcontextprotocol/server-basic-solid, with the other npm audit fixes (Update dependencies to clear npm audit findings #793).

The library itself is unchanged. Version-only diff: no dependency, lockfile-resolution or source changes.

Test plan

• npm run bump patch then npm run check:versions passes (root 2.0.3); npm audit reports 0 vulnerabilities on a clean npm ci.
• Every changed line is a "version" field (55 in, 55 out across 28 files), and the lockfile has no non-npmjs resolved URLs.
• The pre-commit hook (npm run build:all, prettier) passed; the full suite is left to CI on this PR.

After merge, gh release create v2.0.3 on main starts the publish workflow.
