chore: switch public site analytics to self-hosted Umami

[KMKoushik]

Replaces the Simple Analytics script on the public site (landing, quick split, blog) with our self-hosted Umami instance on Railway. Same scope as before: only SiteLayout pages, production builds only.

• data-domains="splitpro.app" so previews and other hosts aren't counted.
• Umami sets no cookies, so the privacy page needs no change.

Checks: tsc --noEmit, next lint (no new warnings), prettier.
