Build rewrites package exports

Medium Severity

@sanity/tsdown-config now defaults exports.enabled to true, so pnpm build rewrites package.json exports. This repo still uses hand-written source exports plus publishConfig, and tsdown.config.ts does not disable that rewrite, so the development entry can be overwritten on every build.
