docs: freeze 0.10.0 documentation

Freezes documentation for the v0.10.0 release using Docusaurus versioning.

Testing instructions

1. Navigate to docs/:

   cd docs
   yarn build && yarn start
   

2. Open the browser to verify:
   • Root /react-native-executorch/docs/ displays version 0.10.0 without any unmaintained banner.
   • Version picker contains Next, 0.10.0, 0.10.0-legacy, and older releases.
   • /react-native-executorch/docs/next/ displays unreleased banner.
   • /react-native-executorch/docs/0.10.0-legacy/ displays the unmaintained banner.
